If you know me, 11/10 chances are I've tried to evangelize you on the New Nordic Food Manifesto. I also rarely do a great job of it, because let's be real..."expressing the purity, freshness, simplicity and ethics of the region" already speaks blahblarghblurb and that's only #1.
My inner gastronomy nerd was birthed from a New Nordic Culinary Culture course taken in Copenhagen with Josh from Nordic Food Lab. I'd never before analyzed cuisine via scientific explorations and experiments, academic articles and informed debates, anthropological frameworks and social theory―just to name a few. And of course eating, though mostly tasting of the unconventional sort. (FYI kombucha mother cultures taste like mucus + fresh foraged ramson makes for great campfire pesto.)
Naturally, Noma equated euphoria, the culminating application of a v nerdy semester. Static pictures don't do the interactive experience justice, but let me know how effectively my evangelizing 2.0 worked. Scroll to the end for BTS shots!
